I love simple, clean food! When I was in Wilmington this week, I had a wonderful lunch at Bluewater Grill. I prefer to eat really light foods for lunch, so I ordered their shrimp cocktail. I fell in love! Since the ingredients were so simple, I knew that I could recreate it at home. This shrimp cocktail would be amazing with a Riesling.
Allow me to share my food porn….
Shrimp, boiled with salt
Pimento stuffed green olives
Thread the shrimp and olives onto skewers
Line a plate with lettuce
Arrange the skewers on the lettuce
Garnish with cocktail sauce and wasabi sauce
There are so many possibilities for arranging this dish to use as an appetizer. You could make mini skewers and arrange them on a platter lined with lettuce. You could serve mini skewers in a shot glass containing cocktail sauce…..Use your imagination!
